The Battery
One of the places that is a must go if you ever visit Charleston, is "The Battery." There is so much history there! I won't go into detail, but just simply show you our photos.
Roww sighting. If you can see it, behind the cannons is a giant gazebo. Sean and I almost got married there, but it was February and there were a lot of rules!
Typical houses and very old trees you'll find in the area.
Grandma, Emelia, Grandpa, and Autumn near the pineapple.
The other water attraction.
Autumn sure does love her Grandma and Grandpa Jordan. We cannot wait to be living closer to them.
Just cannot ever get away from it can I?
We are all finally on the mend (minus Sean... he is still sick and doesn't seem to be getting any better). Autumn asked to cook a few things yesterday, so we did and now we'd like to share with you!
Greek Chicken with New Potatoes.
What you will need:
1 cup of onion, diced
5 cups unpeeled red potatoes, quartered
2-3 pounds of chicken pieces, bones in and skin on
3/4 cup of freshly squeezed lemon juice
1/2 cup olive oil
2 cloves of garlic, finely chopped
1 tsp black pepper
1 tsp salt
1.5 tsp paprika
2 tsp dried oregano
1 chicken bouillon cube
1 very good little helper (or several if you have them)

Seriously?
Yeah yeah yeah, I'm just kidding!
The directions.
Layer the onion in the bottom of a large/shallow baking dish.
Rinse and quarter your new potatoes.
Get your very good little helper to layer the potatoes atop the onion.
Next, layer your chicken atop the potatoes.
In a small bowl, whisk together all the other ingredients. I actually think there was a bit much olive oil, next time I will reduce the olive oil by a little bit.
Pour mixture all over chicken. At this point, I placed my pan in the fridge and waited until dinner time. I should also add in here that I have no idea what qualifies this as a Greek dish, I just know it smelled wonderful while cooking and it tasted great.
When ready, place baking dish in a 350 degree over for approximately an hour and a half or until chicken is done.
Enjoy! My family ate it up. Emelia probably ate her body weight in chicken and potatoes. Autumn ate as much as me I think!
As reward for eating so well, Autumn got to make and eat:
Cupcakes!
Emelia loved it!
We got some practice for Emelia's birthday coming up in a few months!
PS Happy Birthday to Mr Davis (Riley's Dad) and Autumn cannot wait to see her friend, Riley, again tomorrow. She keeps asking me if Riley moved and I keep reassuring her that Riley is still here in Alaska. Then Autumn verifies that Riley is in her HOUSE here in Alaska. It is quite hilarious and a little sad all at the same time.
The Jordan's.
